The Trinity School, located in Northwest Atlanta, introduced the "edible yard" concept to its curriculum three years ago when it began working with Moore Farms, an organic farm based in North Georgia. Each year, Trinity plants in spring, summer and fall. In the fall of 2007, the students planted broccoli, red Russian kale and rainbow Swiss chard plants and sowed carrot and mixed lettuce seeds. Each class took turns preparing the soil, planting, mulching, watering and weeding the garden. When it came time to harvest the vegetables, the students picked them and delivered them to the cafeteria, where they were served with lunch the following day.
